Owner / manager / Executive Chef Mar 2007Sep 2012 Frappo66 Provincetown , MA Creator and owner of namesake restaurant specializing in 'fine food fast'.  Frappo66 was a full service restaurant / experiment designed to present fully prepared food to eat in or take out.  
The basic concept revolved around an upscale 'cafeteria ' where customers could pick and choose from an array of prepared foods under a specific formula (one entree / three sides / one price).  Food items were presented in orders of 5 or 6.  The idea was to take a dinner party at home and translate it into a restaurant. A prototype so to speak of the current 'fast-casual' concept.  The restaurant also ran an a la carte menu serving light fare daily.   The restaurant was very successful and had a 7 year run. Responsiblities included hiring of staff, scheduling, ordering, and menu development highlighting a tropical / Brazilian style theme.  Restaurant was in constant operations 7 days a week , 24 hours a day.
