Set up sauté station for service to include stocking all protein's, fill and stock lowboys, make all mash to include herb infused mash and sweet mash, heat up all sauces, cook and hold dirty rice. Prep every day for weeks service to include pasta cooking and portioning, sauce production, portioning protein's, prepping veg for entrees and so on. Clean up at end of shift and check line at end of night to make sure all is ready for next day's service.
